Oniony Chicken and Noodles
This meal was created as I stood in front of my cupboard, trying to decide what to do with the chicken breasts I had just baked. I had some of this and some of that leftover from other meals, and presto! It turned out really well.
1 envelope Lipton Beefy Onion soup mix
3 T. French fried onions
egg noodles or spaghetti noodles
2 chicken breasts, cooked and diced
While boiling your noodles, mix one cup of water with the Lipton soup mix and add the French fried onions. Bring that mixture to a boil. Drain your noodles and serve onto plates. Then stir your diced chicken into the soup mixture and ladle it over the top. Extremely easy!

Gingersnap Cookies
The only sodium in these cookies comes from the eggs, so we're looking at around 4 mg. per cookie. Not bad, not bad!
2 c. sugar
1 1/2 c. vegetable shortening
2 eggs
2/3 c. molasses
4 c. flour
4 tsp. sodium free baking powder
2 tsp. cinnamon
2 tsp. cloves
1 tsp. ginger
Cream the sugar and shortening together, then add the eggs and molasses. Then add the dry ingredients. Drop by spoonfuls on a cookie sheet. Bake at 350 for ten minutes.
The Food Critics are mollified.

Chicken Stroganoff
This was good, but I can't necessarily say it was my favorite. Of course, when my favorite usually consists of things that are very, very bad for me, I might not be the best judge . . .
2 T olive oil
2 C boneless, skinless roasted chicken
one half C chopped onions
one C mushrooms, sliced (optional)
one C homemade chicken broth
2 T flour
one quarter C low fat sour cream
one t red wine vinegar
one t Dijon mustard
to taste freshly ground black pepper
Heat 2 T oil in large pan. Add onions and mushrooms. Sauté until onions are translucent. Combine broth and flour in small bowl with wire whisk. Blend until flour is dissolved and add to skillet. Bring liquid to a boil, stirring constantly. Add chicken to mixture and combine thoroughly. Simmer 5 minutes. Remove pan from heat and stir in sour cream, vinegar, mustard and pepper.
Serve over cooked egg noodles for a delicious main dish. About 10 servings.
I didn't jot down the sodium content, but it must be okay because I got it off a low-sodium website.

One of the things I've missed the most about going on a low-sodium diet is pizza. One slice of pepperoni has 700 mg. of sodium all by itself -- and who eats just one slice? This recipe has no sodium and is the beginning of my search for good, low-sodium homemade pizza.
1 2/3 cup Warm Water
2 tablespoons Olive Oil
3 tablespoons Sugar
5 cups Flour
1 tablespoon Yeast
Put the water and sugar into a bowl, then sprinkle the yeast on top. Let sit for about five minutes, then add oil and flour. Mix until thoroughly blended, then put the dough in the fridge to rest for about fifteen minutes. Pull out, grease your cookie sheet or pizza stone, and roll out, top it however you want, and then bake at 350 until done. This recipe will make one large pizza or two smaller ones.

Beef Stew
I'll make a confession -- I'm not very good at cooking meat. That's why most of my recipes contain chicken instead. But I managed to pull this one off nicely, beef and all!
2 lb Beef Stew Meat (definitely get this cut)
1 ea garlic
1/4 t Black Pepper,Fresh Ground
1 Onion,halved and sliced
2 c Low Sodium Beef Broth
3 T No Salt Added Tomato Paste
2 c Carrot,Sliced
4 Potatoes,cut into quarters
1 t Rosemary
Combine all ingredients in a slow cooker and cook on low for 8 hours.
Yield: 8 Servings 166 mg. sodium

I love a rich, hearty soup with lots of flavor. This one is delicious and makes me feel warm all the way through. We're definitely going to be doing this one a lot during the winter.
1 lb Ground Beef
1 lg Onion,Chopped
8 oz Mushroom,Chopped
1 cn Low Sodium Chicken Broth
4 c Water
2 T Low Sodium Beef Bouillon
1 c Barley
1/2 t Garlic Powder
2 t Worcestershire
1/2 t Thyme
1 c Carrot,Shredded
1/2 t Black Pepper
Brown ground beef and onion. When beef is almost done add mushrooms and cook a few minutes more. Transfer to slow cooker, add remaining ingredients and cook on low for 8 to 10 hours.
Yield: 6 Servings 102 mg. sodium
